SLIABH LIAG DISTILLERS
The first legal distilling company in 175 years, Sliabh Liag Distillers is an international drinks business based in Donegal. Established by two ‘scatterlings’, James & Moira Doherty, who returned to the Sliabh Liag peninsula (pronounced “sleeve league”, meaning Mountain of Flagstones) to build a legacy. They have assembled a meitheal (work-gang) and set about creating a statement that our whole community can be proud of.
We are driven by a passion for soft-drinking hard spirits and take authentic inspiration from the rugged landscape, tough climate and rich regional traditions – our terroir. By allying that with the international view of a returning emigrant we are producing a series of carefully crafted super-premium brands that are sold across the world.
Our homes are in the festival town of Ardara, where our distillery is based; Carrick, where our blending, bottling and administration operations function; and in the future the development of the Bull Field, at the foot of the majestic Sliabh Liag.
SILKIE WHISKEY
Under soft moonlight, our mermaid comes ashore as a Silkie, at the secluded Silver Strand, on the Donegal Coast. Gently shedding her seal coat, she reveals her human form – a beautiful dark haired maiden with deep, soulful eyes. Dancing along the sand, revelling in the freedom she enjoys in both worlds, she is unaware of the young fisherman captivated by her beauty. She turns, their eyes meet and their love is set.
Our Silkie makes her home with her fisherman but the sea restlessly calls to her drawing her back to the water. The call becomes so strong that she must leave her love and return to the ocean forever.
AN DÚLAMÁN
An Dúlamán Irish Maritime Gin captures “Draíocht na Farraige” or the magic of the sea in a gin that has been described as a love letter to the Donegal Coast. In the shadow of Sliabh Liag, the distillers of An Dúlamán distil eleven botanicals in all to create An Dúlamán. Six conventional botanicals are used to create a robust base for the gin and five locally harvested varieties of seaweed to capture what they call “Draíocht na Farraige” or the magic of sea. An Dúlamán is distilled in tiny batches and bottled by hand with the batch number & bottle number handwritten on the neck label.
Bottled at 43.2%, the ABV at which the delicate and complex flavours can best be savoured, An Dúlamán is presented in a dark 50cl bottle, reminiscent of the bottles found along the Donegal shore during the wrecking of the Spanish Armada.
THE RANGE
Inspired by the tales of the mythical Silkie seals of the Donegal coast, The Legendary Silkie Irish Whiskey is a balanced blend of double and triple distilled single malts, soft grain whiskey and a hint of peated malt. It is bottled by hand at 46% ABV and is non chill-filtered for a distinctively rich character.
Although higher in ABV, The Legendary Silkie is exceptionally smooth with crisp green apple to the fore, ripe red fruits, gentle smoke and an oaky sweetness which gives way to a long lingering finish of gently warming spice.
APPEARANCE
Burnished straw gold.
NOSE
Fresh and malty, brisk like green apples,opens to be more honeyed with a gentle butteryness.
PALATE
Super soft, honey to the fore, bright, hints of orange zest, digestive biscuits, brioche, butterscotch and stem ginger. Warming, elegant and gently melts away.

The Legendary Dark Silkie Irish Whiskey is a smoky blend of double distilled single malts and triple distilled peated single malts with soft grain whiskey, created to savour in the later watches of the night. An ode to the Donegal whiskeys of days gone by, Dark Silkie is a rich smoky blend loaded with character.
Non chill-filtered and bottled at 46%, the whiskey is incredibly smooth with a stunning natural sweetness. Continuing to draw inspiration from the rich folktales of the Silkie Seals, often told by the glow of a turf fire, Dark Silkie has at its core triple distilled peated single malt which is matured in sherry casks. This single malt is peated to 55ppm which after triple distillation becomes 22ppm giving a rich sweet smoky flavour.
APPEARANCE
Amber, rich tobacco gold.
NOSE
Fresh apple and pear with spiced dry smoke and welcoming virgin oak.
PALATE
The Dark Silkie’s signature softness develops to a rich salted caramel sweetness. Waves of sweet pipe tobacco, liquorice and dark chocolate give way to warm toffee and pear. Warming elegant finish of malty smoke and peanut butter.

The Legendary Midnight Silkie completes the core Silkie collection and is our smokiest blend yet, with four triple distilled single malts and a triple distilled peated single malt at its heart.
Created to be savoured over the midnight watch. With 35% triple distilled peated malt at its heart, The Legendary Midnight Silkie is a rich, complex and smoky blend, completing the core range of our Silkie Irish Whiskeys. In all, five single malts aged in sherry, bourbon, oloroso, red wine, virgin oak and imperial stout casks, are blended to perfection giving
a whiskey that marks the final step in the journey of smoke offered by the Silkie collection.
APPEARANCE
Yellow Gold.
NOSE
Rich muscovado sweetness, pipe smoke, Christmas spice, sandalwood, orange zest,
baked apples, chocolate orange, sweet tobacco, rounded, linseed and earthy.
PALATE
Initially intense molasses sweetness, as it warms a dry peat smoke takes over. Pipe ash, raisins and sultanas boiled with nutmeg, cinnamon and cloves. Then toffee apples, a toasted, drying oak and tobacco and leather and yet a freshness – a brisk hint of pine and blood oranges even sweet grapefruit. The sweet spice just melts gently way and leaves a comforting dried fruit and peat fire warmth.

The first in a series of limited-edition releases from The Legendary Silkie Irish Whiskey Collection, Red Silkie is inspired by the final journey of Donegal nobleman, Red Hugh O’Donnell and is finished in both Rioja and Ribera del Duero wine casks, giving an aromatic sweetness with dry wine notes. The Legendary Red Silkie Irish Whiskey not only draws inspiration from the folklore of Donegal, but of the rich history and heritage of the county. The Legendary Red Silkie has been finished in Rioja and Ribera red wine casks, the Ribera del Duero wine region lies just to the east of the final resting place of Red
Hugh O’Donnell at the Castle of Simancas in Spain. Wines from the Ribera region tend to be full bodied with firm tannins while Rioja wines lead with big fruit flavours.
This combination of wine cask finishes gives the whiskey extraordinary depth of character, matched with the signature softness of the award-winning Silkie blend.

Deep amber.
NOSE
Spicy with a red berry sweetness, strawberry laces, sandalwood, nutmeg and dried apple slices.
PALATE
Aromatic and sweet, strawberry coulis, marmalade, dried fruit steeping in Earl grey tea,
opens to dry wine notes, and oak tannins and maintains a crisp freshness. Resin sweet followed by a drying wine tannin and a hint of smoke that ebbs away.

The Three Drinkers Limited Edition Red Silkie is finished in Red Pomerol Wine Barrels sourced from acclaimed producer, Clos L’Eglise in Bordeaux. Aidy & Helena have been open about their own journeys with mental health and are proudly supporting mental health charity My Black Dog, with £1 from every bottle sold going towards supporting a variety of initiatives.

Intense, tarte tatin, candied peel and a hint of licorice with balancing notes of ripe red fruits.
